Cheese Puffs

CHEESE PUFFS

When I was a child my mom used the same cheese puff recipe as a topping for a "cottage pie". Place your mince mixture in the bottom of a casserole dish & fold  the cheese puff dough recipe on top of this. Bake in the oven for 30 minutes.

Fish Cakes

FISH CAKES - Serve this for lunch with a sweet chilli dipping sauce & a fresh salad of cucumber and tomatoes.

Ingredients

2 large potatoes
1 teaspoon salt
2 eggs
1 cup of dried breadcrumbs
1 tablespoon milk
1 tablespoon butter
salt & pepper
1 can tuna
sunflower oil

Method

Peel and dice the potatoes, put in a large saucepan, add salt, and cover with water. Boil for 30 to 40 minutes until the potatoes are soft.
While the potatoes are boiling, break the eggs into a shallow bowl and beat them.
Put the breadcrumbs in a separate shallow bowl.
Once the potatoes are cooked, drain off the water and mash them.
Add the milk, butter and mixed herbs and season with salt and pepper.
Open the can of tuna, drain and add the tuna to the mashed potatoes. Mix well.
Split the mixture into 4 large or 8 small portions.
Use your hands and roll each portion into a ball, then gently flatten into a fishcake.
Carefully dip each fishcake into the beaten egg, coating both sides.
Then coat with the breadcrumbs.
When you have coated all the fishcakes, put them on a plate in the fridge for 30 minutes to chill.
Heat the oil in a frying pan and fry the fishcakes for about 10 minutes until they are crisp and golden brown.

Kids News Tip - You can use other types of fish such as tinned salmon or smoked haddock.

Sloppy Joe's

Sloppy Joe's

A sloppy Joe is an American dish of ground beef (mince), onions, sweetened tomato sauce or ketchup and other seasonings, served on a hamburger bun. The Original Sloppy Joe Sandwich was invented at a Bar in Key West called Sloppy Joes. The original SJ is still available and consists of ground beef in a sweet rich tomato sauce, with onions, peppers and spices. Hence the sandwich was named for the establishment, not the consistency!
Sloppy Joes are traditionally served on toasted hamburger buns, but it is also good over pasta or even as a condiment for hot dogs.

Beef and Balsamic Stir Fry

For stir-frying, ingredients are cut into small and thin pieces so they cook very quickly. As a bonus, this cooking method is quite healthy; nutrients are preserved and very little oil is needed to cook the food. You can use any combination of meat and vegetables. You can use left over beef from roasts you may have cooked for your stir fry. Use noodles instead of rice for a nice change. Chop up all the ingredients before you go to work in the morning and place in the fridge, ready for when you come home. If you are busy and harassed buy some cooked rice at a Chinese take away on the way home from work. Experiment with a selection of ready made sauces from the supermarket.

Vegetable Frittata

This meal is great for a light lunch or supper, you can serve it with a salad! But it is also ideal for a healthy school lunch.  Simply cut the frittata into squares or wedges and its ready to be packed into your child's lunchbox!  I know it uses loads of eggs but it is basically like an omlette, just enjoy!

A frittata is the Italian version of a filled omelette, the main difference being that it is oven-baked, while an omlette is cooked on top of the stove.
