These muffins are Low Fat / Low GI



Flour mixture
2 cups of bran
1 1/3 cups of oat bran
1 1/3 cups of flour
pinch of salt
5ml cinnamon
1 grated carrot
1 grated apple
1 cup of raisins

Milk mixture
500ml fat free milk
1 Tbs of bicarbonate of soda
1 tsp of vanilla essense

Sugar mixture

2 eggs
1/2 cup brown sugar
5 Tsps Canola oil

1. Mix the flour mixture, milk mixture and sugar mixture up in seperate bowls. Heat up milk mixture in micro for about 2 mins to dissolve bicarbonate of soda
2. Add sugar mixture to flour mixture and then the milk mixture.
3. Put into muffin tray and bake for 15 minutes on 180 degrees
4. Makes 18 muffins which are delicious on their own or served with stawberry jam.
5.The carrots can be substitited or left out.  The raisons can be substituted with saltanas, or be adventurous and add something like cranberries!
